- Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
- Add lemon juice, salt, and black pepper. Mash the mixture with a fork until it’s smooth with some small chunks.

- Poach the Eggs:
- Fill a medium saucepan with water and bring to a light simmer.
