Ingredients:

  • 2 large eggs
  • 1 ripe avocado
  • 2 slices of whole grain bread
  • 1 teaspoon lemon juice
  • Salt and black pepper, to taste
  • Chili flakes (optional)
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions:

  1. Prepare Avocado Spread:
    • Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
    • Add lemon juice, salt, and black pepper. Mash the mixture with a fork until it’s smooth with some small chunks.
  2. Toast the Bread:
    • Toast the bread slices to your preferred crispness in a toaster or on a skillet.
  3. Poach the Eggs:
    • Fill a medium saucepan with water and bring to a light simmer.
    • Add a small splash of vinegar (this helps the egg whites firm up).
    • Crack each egg into a small cup or bowl, then gently slide them into the simmering water one at a time.
    • Cook for about 3-4 minutes until the egg whites are set but the yolks are still runny.
    • Use a slotted spoon to remove the eggs from the water.
  4. Assemble the Toast:
    • Spread the mashed avocado evenly on each slice of toasted bread.
    • Carefully place a poached egg on top of each avocado-covered toast.
    • Season with more salt and pepper, and if you like a bit of heat, sprinkle some chili flakes over the top.
  5. Garnish and Serve:
    • Garnish with chopped parsley or cilantro.
