  • 2 spring onions
  • 6 green olives

  • About 8 slices of sandwich bread
  • 4.4 ounces (125 grams) of mozzarella cheese

Instructions:

  1. Prepare the Vegetables:
    • Tomatoes: Slice the tomatoes in half. Using a spoon, gently remove the seeds. Then, cut the tomatoes into slices and finally into small dices. Place them in a mixing bowl.
    • Onions: Trim the spring onions and slice them thinly, including some of the green parts, to add both color and flavor.
  2. Prepare the Olives:
    • Use a rolling pin to gently press on the olives to ease the removal of the pits, then chop the olives into quarters.
  3. Mix the Ingredients:
    • Chop the parsley and oregano leaves finely.
    • Add the olives and half of the chopped herbs to the tomatoes, drizzle with olive oil, and mix gently to combine.
  4. Toast the Bread:
    • Use a toaster or a grill to toast the bread slices until they are golden and crispy.
    • Optional: Use a round cookie cutter to cut the toasted bread into circles for a more elegant presentation.
  5. Assemble the Toasts:
    • Spoon the tomato mixture onto each toast.
    • Drain the mozzarella and cut it into small pieces. Sprinkle mozzarella over the tomato mixture on each toast.
    • Garnish with the remaining herbs.
  6. Serve:
